{"id":1105,"date":"2016-07-08T18:26:21","date_gmt":"2016-07-08T18:26:21","guid":{"rendered":"https:\/\/oikostreecrops.com\/?p=420"},"modified":"2019-10-12T02:20:23","modified_gmt":"2019-10-12T02:20:23","slug":"joy-process-harvesting-cooking-enjoying","status":"publish","type":"post","link":"https:\/\/oikostreecrops.com\/joy-process-harvesting-cooking-enjoying\/","title":{"rendered":"Farm to Table Part I: Raspberry &#038; Mulberry Syrup"},"content":{"rendered":"<p>Is there any greater joy than harvesting fresh fruit or veggies, making a delicious dish and enjoying it with friends?\u00a0Last week we harvested a batch of Japanese Mulberries, <a href=\"https:\/\/oikostreecrops.com\/products\/northern-red-raspberry\/\">Northern Red Raspberries<\/a>, Wild<a href=\"https:\/\/oikostreecrops.com\/products\/edible-fruits\/wild-raspberries\/black-raspberry\/\"> Black Raspberries<\/a> and <a href=\"https:\/\/oikostreecrops.com\/products\/edible-fruits\/wild-raspberries\/yellow-black-raspberry\/\">Yellow Black Raspberries<\/a> at the farm.<\/p>\n<p><a href=\"https:\/\/oikostreecrops.com\/wp-content\/uploads\/2016\/07\/Mulberrypicking.jpg\"><img loading=\"lazy\" class=\"alignnone size-medium wp-image-421\" src=\"https:\/\/oikostreecrops.com\/wp-content\/uploads\/2016\/07\/Mulberrypicking-300x194.jpg\" alt=\"Mulberrypicking\" width=\"300\" height=\"194\" \/><\/a><br \/>\n<em>Picking Japanese Mulberry<\/em><\/p>\n<p>It was a hot day, and the bees were out, but we enjoyed \u00a0marveling at\u00a0what was produced over the growing season.<\/p>\n<p><a href=\"https:\/\/oikostreecrops.com\/wp-content\/uploads\/2016\/07\/DSC02613.jpg\"><img loading=\"lazy\" class=\"alignnone size-medium wp-image-422\" src=\"https:\/\/oikostreecrops.com\/wp-content\/uploads\/2016\/07\/DSC02613-300x200.jpg\" alt=\"DSC02613\" width=\"300\" height=\"200\" \/><\/a><\/p>\n<p><em>3 types of raspberries (left), Japanese mulberries (right)<\/em><\/p>\n<p>We had a small harvest of about 7 cups of berries total. What to do with a small harvest\u00a0like this with 4 different types of berries? Your guess is as good as mine. Since I love pancakes, I decided to make a pancake syrup. To highlight the flavor of the berries, I kept\u00a0it super simple:<\/p>\n<p>7 cups of berries<br \/>\n3\/4 cup water<br \/>\n1 1\/2 \u00a0cups organic sugar<br \/>\n2 tablespoons fresh lemon juice<br \/>\n*If needed, 1-2 tablespoons cornstarch dissolved in a bit of water to thicken<\/p>\n<p><a href=\"https:\/\/oikostreecrops.com\/wp-content\/uploads\/2016\/07\/RecStuff.jpg\"><img loading=\"lazy\" class=\"alignnone size-medium wp-image-429\" src=\"https:\/\/oikostreecrops.com\/wp-content\/uploads\/2016\/07\/RecStuff-300x184.jpg\" alt=\"RecStuff\" width=\"300\" height=\"184\" \/><\/a><a href=\"https:\/\/oikostreecrops.com\/wp-content\/uploads\/2016\/07\/DSC03814.jpg\"><img loading=\"lazy\" class=\"alignnone wp-image-428\" src=\"https:\/\/oikostreecrops.com\/wp-content\/uploads\/2016\/07\/DSC03814-300x225.jpg\" alt=\"DSC03814\" width=\"281\" height=\"211\" \/><\/a><\/p>\n<p>I\u00a0 combined all of the ingredients in a saucepan (with the exception of the cornstarch), brought the mixture to a boil, then brought the heat down and simmered until desired thickness. The way I see it, straining is optional. If you are not bothered by seeds, go ahead and keep them. The mixture will be a bit thinner after straining them out. At that point you may want to add cornstarch for more thickness. Without cornstarch and with straining, the mixture was just slightly thinner than maple syrup.<\/p>\n<p><a href=\"https:\/\/oikostreecrops.com\/wp-content\/uploads\/2016\/07\/DSC03816.jpg\"><img loading=\"lazy\" class=\"alignnone size-medium wp-image-430\" src=\"https:\/\/oikostreecrops.com\/wp-content\/uploads\/2016\/07\/DSC03816-300x225.jpg\" alt=\"DSC03816\" width=\"300\" height=\"225\" \/><\/a>\u00a0<a href=\"https:\/\/oikostreecrops.com\/wp-content\/uploads\/2016\/07\/Afterstrain.jpg\"><img loading=\"lazy\" class=\"alignnone wp-image-432\" src=\"https:\/\/oikostreecrops.com\/wp-content\/uploads\/2016\/07\/Afterstrain-300x268.jpg\" alt=\"Afterstrain\" width=\"291\" height=\"260\" \/><\/a><\/p>\n<p>As you can see, the color was a rich, deep purple. The taste was outstanding, with the mulberry flavor smoothing out the sharpness of the raspberries. You could still distinctly taste the mulberries and the raspberries in the sauce. The pancakes absorbed the sauce nicely, without getting too soggy.
